Monday Already!

Well, the Oscars weren't bad. I did enjoy Ellen.

Today's cooking very easy for me ...
Ladies #1 and #2 are at a function; so, just cooking for Lady #4 who has company all week; and, me.

Lady #4 and company: Lasagna roll-ups w/sundried tomato sauce; zucchini, spinach, ricotta, mozz; with a tomato sauce bottom and a bechemel parm top. Ceasar salad; and, garlic bread.

Me, white bean turkey chili from my freezer. Topped w/avocado, sour cream, cilantro, and cheese; fresh strawberries. I have rolls if I want some, but probably not.

They did add Sarah into the memorials! And while not very many of the nominees and zero of the presenters did it, there were a few black ribbon pins for her. To the best of my knowledge, she was the only industry death last year that was due to a work "accident" rather than something else. And The Walking Dead had a memorial tribute before the credits last night as well.

Dinner tonight will be...QB's tilapia. :lol: We polished off the last of the leftovers last night since it was trash day, and now I get to start the week with a clean slate.

Well, I hope everyone survived 'Tritan.' Some pretty nasty weather. And now, TX is getting hit too.

By the time I got around to dinner; it was 9 pm and starved. Chili was planned, and I thought I had sour cream but didn't. Sorry, I can't eat chili w/o sour cream.
So, I did a baked tilapia w/mayo, mustard, and parm; fries; salad, and fresh strawberries.

Lady #4: Salisbury steak; mashed potatoes and peas; strawberry shortcake

Me, Chili WITH sour cream.

I am *totally* cheating, but somehow I forgot to plan ahead so I could make my own dirty rice. You'll have that.

Then after dinner, out to the bar. People here don't really get it, exactly, but they do mean well. :lol:

Last night was burgers and tortellini soup.

Today is leftover day and what an amazing couple of leftovers: dirty rice or jamabalaya (we have our pick) #ricericebaby :)

I changed ... jambalaya. Using another inherited ingredients. Sausages and Zatarains, which is really pretty good.
I will add some shrimp; and will plenty of leftovers or freezer stash. That, a salad or just strawberries and peaches as a side.

Thx Felix for the inspiration.

Chili, will be just as good tomorrow. It was just frozen this am, so no issues there.

Sadly, the picky one nixed the beignets. I am adding more rum to my Hurricanes.

I changed again. Needed to go to Walmart to get a few items. I ended up forgetting 3 things I actually went there for. But, I saw steak, and just felt like it/baked spud, mushrooms. The chili, has only been out 1 1/2 days, and it went it the freezer the night it was cooked - so it's fine. It will be tomorrow. I did get sausage for jambalaya, but it is so nice out. A glass of wine, by the grill ... doesn't get much better.

edit once again ...
A g/f called and stopped by. Wanted to talk, bad divorce - anyhoo; she brought Thai. Guess what, steak will be tomorrow - chili will be Thurs.
