Well, DD was home for dinner last night and wanted me to make chicken wings, so when I went to the store I grabbed some wings along with the meat and other things I needed to make meatloaf (or something else with ground beef). So buffalo wings with celery & bleu cheese dip for DD & I, french fries and a breaded chicken patty sandwich for my BF. I also made him some chocolate pudding.

Tonight the plan is meatloaf with gravy, mashed potatoes, and some acorn squash for me (most likely steamed or roasted). Cherry Pie for dessert since DD requested it.

Tonight the wife works late so it is a Taylors Pork Roll sandwich and pretzels, of course a beer or two.

Mac and cheese casserole and a salad nothing fancy but I love mac and cheese!

Morning Peeps!

Just talked to my friend in Erie PA, she said they have about 2' of snow and bitter temps. She's a caterer and has a big job today, but the plow buried their driveway. She is actually getting her cross country skies out in order to get to work. That is crazy! I so love FL this time of year.

I didn't get to roast my tomatoes yesterday; so other than that. NO cooking.

Meeting a couple I haven't seen in 2 years since they moved away. They're back in town visiting. Going to a Tapas Restaurant for happy hour. They have 2/1 margaritas and $4 tapas. It's a great deal and fantastic food!

Probably a mix of leftovers and/or soup & sandwiches tonight. I forgot to take any meat out last night, been having too much pasta so I don't want to make that again either. We have only 1-2 slices tops leftover from last night's meatloaf. I can't seem to get it just right again - once I made it close enough to what we were looking for, then haven't been able to duplicate it.

HF, if you are like I am; I often forget to write down what I did. Then when I try to remake it ... it doesn't come out exactly right. Frustrating. Soup and sandwiches are always a good thing. I'm a huge soup fan.

I made a new soup yesterday which I totally love. Roasted butternut squash, onion, garlic, leeks, vegetable broth, just a little evaporated milk, and white wine, all pureed. Then added in fine chopped kale. I was surprised at how good it turned out.

Tater, I agree - nothing fancy with mac and cheese; but, I don't know anyone that would pass up a plate or bowl of mac and cheese. I certainly would not.

Morning Everyone ...

Cool start this am, I really need to remember to close the window at night, lol.

Well, busy day; a bit of actual work, then cooking for the Ladies today.

Lady #1: Cedar planked salmon w/brown sugar, bourbon, mustard glaze; wild/white rice with scallions and almonds; green beans

Lady #2: Lemony seared scallops (marinated in lemon juice, garlic, thyme) seasoned with lemon pepper; served over wilted spinach w/onion; parsley potatoes

Me: Grilled Italian sausages; a mix of onions and peppers; cheesy polenta; tomato salad with a olive vinaigrette

I also just started a batch of sundried tomatoes in the dehydrator. They will be my freezer stash. My 'little cheap Salvation Army bargain' was one of the best investments ever. I've done onions, mushrooms, carrots, tomatoes, herbs, etc.

Just finished making a chicken soup using five chicken legs and thighs and a few onions, I'm going to throw in some chinese dumplings to serve with the broth and chicken, I had a mad craving for dumplings :lol:
