What WAS on Your Plate & WHAT'S for Dinner 9/10-9/11
Busy here ...
Big catering party tonight, I do have help.
For anyone interested ... this is my menu for the party tonight. I do have recipes for each dish, if curious.
Catering Beach Party:
2 tents set up (adjoining) 1 for the quests and 1 smaller for the food. The tents have mini white lights, speakers to hook up for music, fans/AC, and screen or plastic sides in case of rain. 40 guests to celebrate an anniversary and birthday.
No tables or chairs, blankets and pillows w/small rattan tray in the middle. a pile of sand from the beach and a kids play bucket filled with FL wild flowers.
Colors are light blue, turquoise, green, coral, and dark blue. NO class or china; so, clear heavy duty plastic plates in the same colors, but, real flatware
One guest is bringing their own music. Jimmy buffet, some Jamaican steel drum music, etc. It's a beach party! They wanted fun, simple and casual.
We will be grilling on site.
APPIES (4pm):
Fresh smoked fish (mackerel, whiting, grouper) dip w/crackers; raw oysters on the half shell and broasted w/lemon garlic butter and/or cocktail sauce; spicy blue crab ceviche shooters w/tortilla chips; mini cuban sandwiches, fried alligator bites w/creamy sriracha sauce
MAIN/SALAD (6pm):
FL lobster tails bites w/mango/papaya/avocado salsa; caribbean marinated mini steak kabobs; coconut citrus soy marinated mini chicken skewers w/pineapple citrus sauce; spicy grilled shrimp w/kumquat dip; mini blackened grouper sandwiches w/spicy slaw
Hearts of palm salad w/mixed greens; spicy black beans; mixed citrus salad; caribbean coconut rice
DESSERT (8pm): Key lime mini pies; guava tart; lemon strawberry cookie bars; Cuban cookies; coconut patties; Cuban coffee, mojitos, margaritas, wine, beer soda

My Dinner for me and my friends helping. Ordered 5 foot long subs from Subway; dressing on the side, cut in 3rds. This way, we all share. Also taking frozen grapes; and, my friend watermelon chunks and trail mix.
This is what I always do for catering events. Perfect food we can snack on in between courses.

Tonight I made a pot roast with home-grown potatoes and carrots, and fresh cut-off-the-cob corn. The last two slices of the lemon loaf for dessert.

The party was fun; everyone was happy - so that was a good thing. Hardly any food left; and, got home around 10:30.lovinretirement wrote:KC, I could go for that salad, and of course, the desserts.

I wish I grow spuds down here, I can in the Fall, but, it is work; too wet sometimes and NOT cold enough. Corn, so good right now.
Alexi Rae, Stew COMFORT food always good. I love to cook mine in the crock pot so I can smell it all day.
Food Nut, Lomein, egg rolls, and spicy beef my favorites.

Me: Lasagna roll-ups w/ricotta/spinach, cheese filling and my spicy tomato red pepper sauce; grilled romaine salad

Today, I think I'm going to make Lemon-Rosemary Spaghetti with shrimp instead of chicken http://www.recipezazz.com/recipe/lemon- ... icken-5089. It's easy as doesn't take too long. Kind of lazy today.

Rollups. Just spread the filling roll and put in a pan with a little sauce, top with more sauce and cheese. Not much different than regular lasagna; but, I love the no boil noodles.
Just lay in the same baking dish and top with hot tap water. In 5 minutes, ready. Just pat dry, pour the water out of the pan and no boiling. Just spread the filling, roll and ready.
Besides. I love when done ... ;put 3 in a tupperware, and freeze. Then, ready for a quick lunch a single dinner.
And, you can make 6 or 12 at a time. You can also use leftovers- like pesto or arugula; or sundried tomatoes, or smoked chicken. Great way to make small dishes easily.
