What WAS on Your Plate & and WHAT'S for Dinner 7/11

IT'S MONDAY ONCE AGAIN! I REALLY THINK WE SHOULD HAVE 3 DAY WEEKENDS, DON'T YOU?

Ladies #1, #2, and #3 Eating Together Tonight: Spatchcock cornish hens with http://www.recipezazz.com/recipe/easy-f ... hens-24275; baked sweet potatoes in foil package; http://www.recipezazz.com/recipe/brusse ... salad-7973. Lady #3 is bringing dessert.

Me: Meatless Taco salad w/beans, corn, greens, cheese, salsa, sour cream, olives, and avocado. If I get real busy, I do have some soup in my freezer I could heat up at the last minute.

So, What's on your Table Tonight?

I'm really going to have to try spatchcock chicken. It would be great on the grill.
Last night we had marinated grilled thick cut pork chops, mashed potatoes with mushroom gravy and yellow wax and green beans.
Tonight it's just going to be breakfast for dinner.

They really are good on the grill; and, if you don't know how to cut them; I usually just ask the butcher. They are happy to do it for you. And, I have 3 plain bricks I use for my smoker to sit on ... I just wrap them in foil when I make the chicken so they get nice and flat. They come out super moist and quick too. You still sauce or glaze them too.

The hens are really cute then done. I usually cut the hens in half; and each person gets a half of a bird. They literally cook in like 15 minutes.

Brekkie sounds good tonight; I have some veggies to use up ... maybe an omelette on the list this week. Haven't done one in a while.

Having leftover grilled burgers very soon, for some reason they don't have the same flavor as when you make them the same day I can't understand why :?
