What's Cookin' This Hump Day?
Last night I ended up with a quick fried rice w/chicken. Busy day; so, I'm looking for easy again. If I get time to get to the store; I'll go with slaw and corn on the cob and a salmon burger. If I don't go ... My last seafood stuffed clam shell, a corn salad; and, a grilled romaine salad.
With a big catering event this weekend; and, lots of work to do ... I don't want any leftovers in the fridge. Just using up what is on hand.

Happy Hump Day! tonight we are grilling burgers stuffed with mozzarella cheese, Asian coleslaw and potatoes cooked on the grill

I grilled some marinated tilapia for Thai fish tacos and served that with a coconut fried rice, grilled pineapple and spicy peanut sauce.

Nice to see you Sue; sounds tasty. I love tilapia in tacos. Perfectly mild fish for those. Bethany, anything on the grill is always my favorite.

We had Chicken Balls In Chinese Broth - but added a package of orzo and a package of frozen peas to make a very filling soup.

Sounds good Ellie. I've done something similar by adding tortellini and fresh spinach. Simple; but,l makes a great hearty soup. And, orzo; I love that stuff - always in my pantry.
