What WAS on Your Plate & and WHAT'S for Dinner Tonight 4/6
My dinner, pretty easy. Kitten mentioned soup yesterday; and, it sounded good. I have a bean and swiss chard soup in the freezer; so, that sounds perfect. A couple of warm tortillas; and, a fruit salad.
Lady #1: Grilled margarita fish tacos w/citrus slaw, pickled onions, avocado crema, cilantro; spicy black beans; citrus salad
Lady #2: Grilled margarita tuna, on a fried tortilla topped w/black beans, greens, cilantro, avocado crema, spicy tomato salsa; citrus salad
Both the tilapia and the tuna are marinated in a simple bottled margarita mix, along with a bit of tequila. I jazzed up my black beans with onions, green chilies, cumin, chili powder, jalapeno, lime, garlic, and Mexican oregano. The avocado crema is just lime, crema, cumin, and avocado.
So, 2 different dishes; but, same ingredients.

Ranch Pasta Salad With Bacon
1 (12 ounce) package uncooked tri-colored rotini pasta
10 slices bacon
1 cup mayonnaise
1 (1 ounce) packet dry ranch dressing mix
1⁄4 teaspoon garlic powder
1⁄2 cup milk (more, if needed)
1 large tomatoes, chopped or 15 grape tomatoes, cut in half
1 (3 ounce) can sliced black olives
1 cup sharp cheddar cheese, shredded
salt and pepper
DIRECTIONS
Bring a large pot of lightly salted water to a boil. Stir in rotini pasta and cook for 10 to 12 minutes or until al dente, drain.
Place bacon in a skillet over medium-high heat and cook until evenly brown. Drain and chop.
In a large bowl, mix mayonnaise, ranch dressing mix and garlic powder. Stir in milk until smooth. Add bacon, tomato, black olives and cheese and toss to coat with dressing. Season with salt and pepper to taste.
Cover and chill at least 1 hour in the refrigerator. Toss with additional milk if the salad seems a little dry.

Ranch pasta dounds delicious. How about chicken wings or grilled drumsticks ... I'm always thinking either burgers or chicken with pasta salads. However, you could grill a hot dog for me; and, I would be happy!!!
And, who does NOT like pasta salad?

ElleLee, that Ranch pasta salad sound delicious. How about a gourmet grilled cheese sandwich with it, with sliced tomato and fresh basil leaves, and instead of buttering the outside to grill it, put a couple tablespoons olive oil in a small saucepan with 1 minced garlic clove. Heat on low just till the oil is warm and infused with the garlic flavor. Then brush it on the outside of the bread and grill.
Tonight for us, it was rotisserie chicken breasts, green beans with garlic and onions, and spaghetti squash, nuked, scooped out and put in a skillet with 2 tablespoons butter, salt, pepper, 1 tablespoons brown sugar (or Splenda brown sugar, what I used), diced red and green peppers and crumbled bacon. Saute on low till peppers are soft.
