What WAS on your Plate & WHAT'S for Dinner Tonight 3/5
I typed this out; then, forgot to his post!!
It's been sort of a hectic day. Sorry about that.
Dinner ... very easy
I have some frozen cheese tortellini; just enough for a bowl of soup. I have some frozen mushrooms, and; fresh spinach from the garden. I think a simple tortellini soup; and, fruit on the side. Very simple and light tonight.
After 3 busy days away; I think a big bowl of popcorn, and just laying low tonight will be just fine. I did have a smoothie shake and a slice of date walnut bread for brekkie; so, I'm good.

Lamb is so $$$; I wish it was less; I always try to buy it when on sale.

Tonight I made homemade pizza, using Kittencal's roasted red pepper pesto for the sauce, since hubby's potassium is elevated. Been really watching. So here's hoping it goes down when he goes back to the doctor on the 14th. Then we'll be careful. You just don't realize how much everyday food is high in potassium.

Yep, on Lamb ... when it is easter ... I get leg of lamb and lamb rack of lamb from Sams; always way cheaper. I bag it up and freeze for later. I am hoping they have ground lamb too.
Well best wishes to dh, hope he gets a good report. I'm a type 2 borderline diabetic ... but, got a good report back. It does show that moderation and exercise DOES work. I've avoided meds for 3 years now; and intend to keep it that way. YES, a good diet and moderation is definitely the key. Good for you on keeping an eye on it!! That goes for diabetes, blood pressure, salt and other issues. YEP, just keep an eye on all that stuff. Good fresh homemade cooking is always best.
I always tell people ... it doesn't have to be fancy or special; just fresh, and homemade. And, be aware of seasoning, sauces, marinades, etc that you use ... they can be FULL of salt, sugar, and calories.
