What WAS on your Plate & WHAT'S for Dinner Tonight 1/30

What's Up Today?
Been a rough morning ... Someone passed in our neighborhood last night; so, ambulances and fire trucks since 3am. No sleep. Then, off to a friend to walk a dog, farmers market; and home. So, I am VERY LATE AGAIN!

Tonight ...
My leftover turkey/rice stuffed chard rolls (aka stuffed cabbage rolls); on the side, peas and lima beans. All done, just heat and serve.

But ... For my Electrician Friend who fixed my fridge this week - I owe him big time.
I promised him dinner, and BEER. A new lasagna recipe (will post today I hope; with kale, tomato and roasted red peppers); roasted portabellos and leeks (he and wife are vegetarian for the most part); garlic bread; salad. Will drop off later. I know his wife will happy NOT to cook!!!!

Sorry to hear about your bad night KChurchill5 :(
Tonight is breaded chicken breast filets I'll stuff them in buns, also a quick broccoli slaw, I saw one on this site but stupidly I forgot to save it, will go and see if I can find it again.

Also had broccoli slaw. And made shrimp over rice, with a faux wine sauce and sauted onions, red and green peppers, garlic and cherry tomatoes. We are non-drinkers, so when I want a wine-tasting sauce, I use either white grape juice and white wine vinegar, or purple grape juice and red wine vinegar instead. I know all the TV chefs say that wine cooks out quickly, but it actually doesn't. I checked on a government website that had an article about alcohol burn-off during cooking. It was a scientific experiment to test the amount of alcohol content left in foods after cooking with wine. If you're a non-drinker like myself, check it out. You can do so much with grape juice to add the rich flavors.

Lovin, you are right. YES, MOST of the wine does burn off. But, NOT ALL. Now, for me; I cook with alcohol all the time; HOWEVER, a dish with lots of alcohol, especially towards the end of cooking I wouldn't serve to my child. I don't mind a dish where it has cooked a long time. BUT, I definitely respect those who decide not to drink anything; and love that you have come up with a great solution, giving you similar flavors.

Jac ... thx, a long night; but, a fairly easy day. So, that is a good thing.
Nachos, Chips and Movies is definitely for me.

Just dropped my friends dinner off ... they were thrilled. But, he earned it; and his wife was very happy ... The kids loved the brownies.
Hey, FREE electric work for me ... FREE food him; that's what good friends do.

Tonight, Beef Ravioli Casserole, it's a good easy recipe and versatile too

1 1/2 pounds ground beef
1 onion, chopped
4 garlic cloves, minced
pepper, garlic salt, Italian seasoning, basil, oregano and parsley
mozzarella cheese
1 jar spaghetti sauce
1 pkg frozen ravioli meat or cheese your choice



Directions

Cook your hamburger. onions, garlic and all seasonings. Drain off any grease.

Take a 9x13 pan and spread a little bit of the spaghetti sauce on the bottom. Place frozen raviolis in the pan top with meat then the rest of the sauce, then cheese on top. Cover with foil and bake at 450 for 30 minutes uncover and bake 5 to 10 minutes more.

Thx cooking ... casserole sounds good; I love easy dishes to put together like that.
