What WAS on your Plate & WHAT'S for Dinner Tonight 1/21

Almost Friday ... One day and counting!

Pretty easy here; blackened catfish, slaw and jalapeno rice. Nothing hard, nothing fancy.
Comfort food last night, scalloped spuds.

Tonight I marinated some pork chops in balsamic vinegar, brown sugar, pepper, minced garlic, oil and Italian seasoning. Browned them in the skillet, then added some crimini mushrooms, onions and garlic. Then added back in the marinade and some beef stock. Simmered for about 45 minutes. Had broccoli, carrots and sugar snap peas with them. Very good, if I must say so myself!
