Tonight a return to simplicity
Roast Whole Chicken -- just with salt/pepper and butter rubbed in -- Roast Potatoes and sauteed Mushrooms in a red wine sauce.

Ellie, I have pizza on my list as well for this week. Sounds like a nice easy family night.

Lady #2+2: http://www.recipezazz.com/recipe/artich ... sauce-6620; caesar salad w/cherry tomatoes and olives; a cool whip type chocolate mint pie for dessert.
Actually the shells and pie are all done. Just bake, make a quick salad and drop everything off later.
Me, I switched last night and tonight. I did fish last night with fries and a cucumber salad; tonight, back to my pork sandwich. Maybe another type of cucumber or tomato salad, since I have a bunch to use up. Anything easy.

3 pounds Cube Steak (round Steak That's Been Extra Tenderized)
1 cup All-purpose Flour
Seasoned Salt
3 teaspoons Ground Black Pepper, Or To Taste
Salt, For Seasoning Meat
1/2 cup Oil (more If Needed)
2 Tablespoons Butter
Heat oil in a large skillet over medium heat.
Mix together flour, seasoned salt, and pepper.
Season both sides of steaks with salt and pepper. Dredge each piece in flour mixture, pressing to coat with as much flour as possible.
Add butter to pan right before frying.
When butter is melted, fry pieces of steak in butter/oil mixture. Flip when sides are deep golden brown and cook about 1 minute on the other side.
Remove to a paper towel-lined plate. Serve immediately.
