We are having http://www.recipezazz.com/recipe/chilli ... -fry-18506 with rice or at the home show I bought some colored orzo pasta - it looked really pretty. And probably some veggie. This recipe calls for groundnut oil - I have no idea what that is so I will use use peanut oil instead.

Afternoon Ellie, I forgot to post today.

FYI, ground nut oil is the same as peanut oil in the US. You got it right. Basically any neutral oil. Soulds like a good dinner. I bet the colored orzo will look fantastic.

I am making Scalloped Potatoes and Ham (no cheese) for all 3 of my ladies. A mix of peas, lima beans, and a seasoning mix (celery, peppers, onions); and heirloom tomato salad - just mixed colors tossed with a little basalmic vinaigrette and sliced fresh mozz.

Me, salmon cooked in a foil pouch on the grill w/white wine, lemon, lemon peppers and herbs. Green beans in a foil pouch too w/garlic oil; and, a creamy lemony pasta (pasta, heavy cream, herbs, lemon). It's really easy, and takes no time to cook.

Tomorrow heading out of town to house sit for a friend. It will be like a mini vacation. I'll still be cooking for me; and, I'll still be checking in.

The salmon in foil sounds wonderful! I love those kind of meals.

Thx Ellie, yes, I love it too. So easy too. I doesn't a nice brown color, but, really moist. And, NO pans, lol.
Pizza is always good any night.

I'll be up at my friends house sitting; so, yesterday; I planned scalloped potatoes and ham. Unfortunately, I decided to go to the local cuban/spanish deli instead. Had a cuban, black bean soup; and brought back a container of Sopa de Plantos for lunch today or tomorrow.

I might make a pot of kale and bean soup for my friend when he returns (freezer stash for him)

Tonight we are having fish sandwiches and fruit salad tonight with ice cream for dessert. I love these kind of meals. We are using my recipe http://www.recipezazz.com/recipe/fish-s ... slaw-16538, but using catfish instead of grouper. It is impossible to buy grouper where I live.

I catch grouper; but, don't always have enough. Catfish works great for fish sandwiches; I use it often.

Sounds like a great dinner.

I made a breakfast casserole and some fruit/yogurt cups for the workers today at the place I am house sitting. They are doing some FREE work for me in return for a few meals. Works out good.

Tonight, easy. Classic meatloaf, parsley buttered noodles, corn on the cob. I may just do a tomato/cucumber salad instead of carbs ... but, I'll decide at dinner.

I love meatloaf but we don't have it often anymore. As we are usually only 2 or 3 for dinner these days. Meatloaf is comfort food for me!

Just me, but I make it often. I buy those mini aluminum bread loaf tins. The tiny ones. About, $2 if that, less I think. Anyways, I make meatloaf in those.

Cook first or freeze first, either way. Makes perfect for 1 1/2-2 people. Two loafs is great for dinner and cold sandwiches the next day.

I use 2 lbs for 3-4 loafs. Works out great. I make one for dinner; then, freeze; thaw and cut into slices for a sandwich. Great for small families or 1-2 people.

If you have odd ends, or broken pieces ... Make a quesadilla.

Add grilled onions, the meatloaf (broken up), cheddar cheese; and make a quesadilla. It is delicious - a great lunch dish. Also delicious as a dipper for tomato soup.
