Sounds like a winning meatless dinner, Kc! Of course, I just yesterday finished up my pot of spaghetti sauce, but guess what.......while going thru my freezer looking for some Brussels sprouts, I found two packages of spaghetti sauce from my last batch. I also found two packages of chicken tenders. Both the sauce and the chicken I had forgotten about. But, alas, they were fairly recent additions to the freezer, so they are good to go. I am horrible about tossing things on top of other things and forgetting they are there. Even when I don't necessarily need to buy meat some weeks, if I find a real steal of a deal, I'll buy things, and that's how they get "forgotten". I also found a package of chicken gizzards that are over two years old....YIKES :shock: I'll cook those with some gravy to feed to the dog. I hate for anything to go to waste, and though I wouldn't eat them myself, the little man will surely love them :D

For tonight's dinner......I'll MW a single serve frozen Stouffer's mac 'n cheese, add a chopped chicken tender and some chopped baby spinach. I don't buy very many prepared meal type dishes, but when in a pinch, I can always fall back on Stouffer's :D

Deepster, trust me ... Stouffers has come through for me too. Sounds just fine.

I have got pretty good at the freezer stash thing. Being single; I always cook more and freeze. I do have an extra freezer in the garage which is nice; but, I do have a roll of tape and sharpie marker by each. I've got pretty good at marking them. But, agree, it is hard. I also go through my freezer every month. I won't buy much new until I use what I have. I try, but it doesn't always work.

Today's cooking ...
Lady #1: Broccoli cheese soup. It is sort of mix between 2-3 recipes. I don't like it too cheesy; and, use monterey jack and 2 cheddars. I also puree the soup; but, add florets, and shredded carrots too. I think I took the best of a few recipes.

Me: Going light - A salad plate. Turkey salad on crostini, hard boiled eggs, marinated black olives, tomato/mozz salad, strawberries. A grazing night.

Morning!

Woody Woodpecker was wide awake at 4:30 this am. He gets on my gutter and goes at it. It sounds like open fire - the whole house shakes it is so loud!

Oh well, I decided to make bread in the ABM; and, dry some herbs in my dehydrator.

Dinner, Ladies #1 and #2 are out till Monday. So, just me.
Last night, running late I had chili, chips, and fruit. Quick and easy.

Tonight, back to my salad plate. Turkey salad crostini, fruit, eggs, olives, etc.

Well, my roast didn't finish defrosting so it is going to be plan b.
I do have to make a loaf of bread today. And I might make a peach crisp.
Still figuring out what plan b is. LOL

Plan B= Basement (where the freezer is) and I found a package of frozen cannelloni. So Italian it is. Will make salad with that as usual.
And for actual cooking, besides my bread will make the peach crisp I wanted to get new pics of. Dessert sounds nice. I don't make dessert often.

Sue, I almost did Italian too, the choice was tacos or spaghetti. We had tacos. Not sure about tomorrow. We have leftovers of potato corn chowder and tacos. Don't think they go together, I might freeze the potato corn chowder, but I don't like grainy potatoes, so might bring to my moms house? I don't know. I was never so happy to be able to be able to cook the last 2 days. Kitchen isn't complete, but I got a sink and I got a stove! :lol:

Morning!

How is everyone? Dis, you are gonna get cold up there - looks like snow too; as well for Sue.
We are going to get some rain down here - we need it.
So, what was your plan B Sue? I have those too. Always something lurking in the freezer or pantry. Dis, glad you got part of your kitchen back together. Hopefully it will be done soon.

Today, just me. Both Ladies are out of town until Monday night. Church trip. My oven and micro still not working (they are connected); so, need to get approval from my insurance to pay for it. Looks electrical, but not sure yet.

Supposed to rain ... so it will be my grill - rain or shine (I have umbrella). A grilled marinated chicken quarter - finished with BBQ sauce; macaroni salad, cheesy broccoli I think; MORE FL strawberries.
