Re: A unique Thanksgiving dessert.

I guess non-traditional would be the keyword here. I love pumpkin desserts but that's what they expect to eat -- I want to surprise 'em!

A unique Thanksgiving dessert.

(I posted this request on the *other channel* too  ...but I figured that the more ideas I got, the better.) I am always responsible for the bulk of Thanksgiving dinner (which I love doing). Our dinner is always a traditional one (Turkey and/or ham, mashed potatoes, gravy, dressing, yams, etc.) ...

Re: Onion, onion, which kind of onion?

When I was between the ages of 6-12 I spent most of my summers on a small Southern Ohio farm in the Teays River Valley and we ate raw onions every night, at least 2-3 apiece. We just peeled them, cut them in half and salted the dickens out of them and crunched away. It would kill me now, especially ...

Re: My Favorite Chef?

Favorite chef? Well I've always admired Paul Prudhomme but I think that Jacques Pepin has become my big all-round favorite. His Fast Food My Way and More Fast Food My Way series are both superb -- I have the DVDs and watch them with great frequency. He makes the recipes so easy and these are truly t...

Re: Favorite Cookbook?

Sorry for the belated reply! That recipe is one in the Mr. Food Cooks Like Mama cookbook (link above). I make it all the time -- a huge hit with everybody and really easy too if you employ mise en place. Here's the recipe (there are several variations on the net but this one most closely emulates th...

Re: Onion, onion, which kind of onion?

I've been to Vidalia, Georgia a couple of times in the early spring to check on the crop (the harvest of mature onions commences around the beginning of May) so, as you can see, I'm pretty serious about my onions. Vidalias have to be checked very closely in the supermarket since they (the Vidalia re...

Re: Home Made Tomato Soup Recipe Please?

About 80%-90% of spelt flour is grown in Michigan and is usually used by people who have some allergy issues with wheat flour. I really can't tell much difference between the two in terms of cooking and flavor. It is a different genus and species from wheat. It's also pretty readily available at sup...

Re: Home Made Tomato Soup Recipe Please?

Could you take a recipe that you like other than the fact that it uses wheat flour and substitute spelt flour for it?

Re: Just got the new Cook's Illustrated Cookbook

Hi, Shirl. On novels and non-fiction (not including how-to books such as cookbooks) I read them from cover-to-cover. I read 3-5 books per week so it keeps me very busy. If I were not retired, I couldn't do this. On cookbooks and similar works, I usually do not read them from cover-to-cover, (an exce...

Re: cutting back clematis

My wife has an autumn clematis out back and she cuts it to the ground every fall and it gets bigger every year. It's HUGE!
