Wouldn't life be simpler if we could take EVERY left over food thing and make it into a dish that seems like afirst - not a leftover. Come to think of it, wouldn't all of life be better like that? I can think of at least three things. Friendships/relationships, things to do with money like careers, and of course places you have been or travel to. On second thought, let's stick with the food :) Definitely more messier (wink here). Speaking of messy. Them mashed potato pancakes in that frying pan. Good mess. Honest mess. Be careful not to burn them though. Which is exactly what I did on first take. Running to grab my camera because these golden babies were just looking perfect I got side tracked on the phone. Never, ever answer a phone when you are about to flip more pancakes. Unless you willingly know you will burn them. That ever happen to you?!? Right. Just don't burn them though! But that sauce? Incredibly amazing. Just so because you know what you like and you like it the way you want (I might have had a bit too much wine writing that last sentence). You would have it no other way. Bacon? Why not. Hot, hot sauce? Yup, that too. Berry cream cheese? For sure. Sour cream? Definitely. Throw some green onions and chives and you have a complete potato pancake dipping sauce that will give your taste buds a jolt. A nice one at that. Delicious!!! So how does this potato pancakes with cheese recipe stack? Just fine, thank you. But you will need at least 3. Maybe more! What will you dip yours into?
