Can you believe it is already April! What happened to January, February, and March? Time seems to be flying by. But, I'm sure many of you are sick of Winter - and ready for Spring.

A busy day here; My home owners association is doing some painting and stucco work on my house, so; it will be noisy. Unfortunately, they may have to get in my garage and porch area, so I'm stuck being here all day.

Dinner ... I have some leftovers to use up, so that's the plan.
I have just enough steak for a small sandwich, couscous and chick peas (but, I think I will freeze that for a dish later on); and, I have my scalloped potatoes too.

Probably the potatoes with a salad. Maybe a grilled romaine salad.

Meatloaf( no recipe,just a throw together)
Cabbage
Mashed Potatoes or M & C.

I didn't get to sleep until almost 5am, was up with a phone call at 8:30, finally got back to sleep around 11:00, and didn't get up until just after 2:00. Luckily, fish thaws quickly. :lol:

QB's #recipe12227 with French-style green beans and probably some "fried rice" from a box.

I made a casserole that I found on the net years ago, but I have changed it so much. The original didn't include any spices, was very bland without them. I never realized I didn't post it, as I have shared with so many friends and family. Everyone who has tried it, loves it. I need to post it. Its potatoes, hamburger, onions and bells (my additions), spices and cans of mushroom soup and cheese. OMG its so delicious! Bad for you, I am sure, but my family gets so excited when they know I am making it! It is that delicious, your family will get excited. My mom even included it in my home towns church cookbook last year. Not fancy but delicious! ;)

Sue I had a friend get that. She lost so much weight. Her body wasn't absorbing any nutrients from what she ate. It's a horrible disease. Having to limit tomatoes and such just made me so sad for her. (The seeds in tomatoes) Let us know how you are doing with this. What are you allowed to eat now?

Morning!

Sue, Dis is right with the seeds; my Mom had such a hard time with that. No Strawberries, cucumber, tomatoes; unless all the seeds were gone. Mint apparently is absolute NO NO; and, there is a variety of more dont's than do's.
Dis, the casserole sounds delicious. Sometimes simple casseroles like that are just so good. The peppers sound like a nice addition.
Felix, the fish sounds really delicious. I did end up with my scalloped spuds, which was perfect, along with a quick salad.

Today's Cooking ...

Lady #2: Spicy coconut shrimp and scallop stir fry (new recipe) over rice; mixed melon salad

Me: My g/f admits, she has never made soup before. So, since we both have ham bones from the holidays... bean soup is on the menu.
I am making a 15 bean soup; where, she is making navy bean.
Mine will have carrots, celery, onion, tomatoes, and sometimes I add potatoes, etc. Her's pretty much the same, minus the tomatoes.
I'm also throwing in a loaf of bread in the ABM; and a fruit salad.

Tonight I'm doing my #recipe7688 with Michelle_Minicucci's #recipe3657 and the last of my #recipe12348. Mom has already said she doesn't like the salad, but I've still got almost half a bowl left and it's either eat it or toss it.
