Tonight I made Crispy Baked Pesto-Parm Chicken breasts (just posted), cauliflower "rice" with Indian spices (just posted, and leftover mac 'n cheese.

Sounds very tasty to me. I love the chicken especially!! And that Cauli rice sounds delicious. Do you know you can actually by it in the stores now. Obviously it doesn't take long to make; but, you can buy it if in a hurry.

Well, once again burgers got postponed because by the time dinner rolled around, I didn't feel very well. The bf just had the always in the freezer chicken fingers (we always have a couple bags of them from Trader Joe's for "migraine nights" etc) and I just had a chia yogurt bowl with some blueberries.
Feeling much better today, but I already had thawed out some chicken to make Asian Chicken Bowls tonight - just chicken I marinated in a mix of asian ingredients (soy, garlic, ginger, a touch of honey, can't remember what else) and will serve with jasmine rice and steamed broccoli. Just something really simple.
If I ever stop being lazy, I will also cook up a quiche or some hard boiled eggs to use up the rest of the old box of eggs and make some more soup out of whatever veggies are left over from the previous week. Those will be for lunches during the first half of the week.
