
Original Pancake House German Pancake (Copycat)

I grew up very near the first Original House of Pancakes in Portland. My junior high was just blocks away from that restaurant, and our home ec teacher was given the recipe for the Dutch babies. We made them in home ec class, and I remember that we started with a very high temperature on the oven, we poured the batter in the cast-iron skillet, then cooked them on the stovetop a few minutes first, then slid them in the very hot oven, and then turned it down after a period of time. I have never seen a recipe like that, I didn’t have the presence of mind back in my younger days, to keep hold of something like that. I have wondered all these years exactly what that recipe is. Mine are good but they do not hold the shape the way they do at the restaurant!
