I may even grill the meatloaf and add some sliced onion and cheese too. Just depends what I feel like.

Once again been missing this Kim! Know you cook for others but I so admire that you do the same for you! My freezers and fridges are well stocked but still find cooking for one a challenge!

Sorry you aren't feeling well, have to hope it's not six week one we had in our area!
The past few days have been looking for my Marinated Olive recipe with bell peppers and onion, what are the chances you have a similar recipe Kim? (If memory serves it has vinegar, sugar and oil.) Wanting to add to my Christmas Eve Charcuterie Board. If you do would be super happy if you shared!
Will be trying for a daily visit!! :)

Hi Gerry, thx for stopping by. And, thank you; but, I never really cook for one. I always cook for 2, 3 or 4. I love my leftovers. I try to repurpose; like creamed chicken over biscuits one night. Add mushrooms and peas; and serve it over a baked spud. Meatloaf can because a meatloaf quesadilla with cheese and onions. Or, beef stew can make a great shephards pie or tortilla pie or taco. And, I always have burritos in the freezer. I take leftover rice, potatoes, beans, chicken, veggies; and make burritos. Wrap them up; and, in 5 min in the micro; dinner. Top w/salsa cheese and sour cream.

Marinated Olives. I have a baked olive dish; but, it is served warm.
The only marinated olives I have is ...
2 cups mixed olives, 1/3 cup each red wine vinegar and olive oil. I usually add a pinch of red pepper flakes, garlic; and some fresh rosemary and oregano.

My marinated peppers and onions. Have a typical warm brine; like making quick pickles.
1 cup white or red vinegar, 2/3 cup sugar, 1/8 cup kosher salt, 1/2 cup water, 1 garlic clove, mashed, 1/2 teaspoon peppercorns (optional), 1 bay leaf, dill or rosemary, mustard seeds (optional).
Heat up and pour over your favorite vegetables.

Hope that helps.

Welcome. I usually use my baked ones http://www.recipezazz.com/recipe/baked- ... -wine-2194; but, these can be served room temp. And, you don't have to add all the extras to it either. You could easily add peppers, onions, etc.
