Afternoon All!

I had to work from 4am till 12 today, so a bit tired. Had a nice Easter - sunrise service on the beach, dinner with my son, and then a friend stopped by for some leftovers. A relaxing day. I hope everyone else had a nice easter as well.

Today's Cooking ...

Ladies #1 and #2: Creamy Artichoke and Lemon Soup; home made pumpernickel bread ABM; Crab Salad - no sandwich, the bread as a dipper for the soup; and the salad on a bed of greens.

Me: My son is stopping over to help me move a few 'monster' sized staghorn ferns; he asked for sushi. So, I'll place the order, and he will pick it up on his way here. Of course it is Mom's treat. Sushi, NO COMPLAINTS from me.

Well, I *was* going to make pulled pork for Easter but Saturday I realized I hadn't got it pulled out of the freezer in time to thaw, so I bought a shank ham on sale. Well, I didn't get that one done either as we decided to go down to Krohn Conservatory on the Ohio river which is 80 miles roundtrip, and it was either bake the ham or go to the flower show.
So I guess I am baking ham today! :lol: Quite possibly with Derf's scalloped potatoes and some green beans.
Yesterday ended up being Lamb Korma (lamb curry, creamy, has cashews), Saag Choley (curried creamed spinach with chickpeas), Bhatura (puffy fried bread), Raita (like an Inidan version of tzatziki), Keema Samosa (samosa stuffed with beef), rice, and Mango Lassi (mango smoothie with yogurt and rose water)- out to eat coming home from the conservatory. I might have had some kheer (rice pudding) on top of that but there was no room in the hollow leg since we had got some ice cream down in Cincinnati looking for anyplace open to get either that or something to drink for the ride home.
I am still hungry for kheer now and am thinking of making a little batch in one of those mini crock pots. I haven't made kheer at home since i tried Charishma Ramchandani's recipe which made enough to fill a bathtub. I don't think I need quite that much, and the crock pot sounds better than hovering over it stirring all day.

I missed Sues and Heathers posts too. I guess I was really late today. Sorry guys. Got called in at 4am, well really 3. But worked until noon. Serves me right for not hitting REFRESH when I got home. My computer was on the dinner thread, so I just posted. OOPS! [-X [-X :-?? :-??

No kheer today- I forgot I had a few ripe bananas sitting on the counter so banana bread is in the oven as I type.

Shrimp patties are made ready to be made. I'm changing my slaw to a creamy chopped salad ... cabbage is a bit rougher than romaine ... so we will come up with something. But, I made some nice fresh bread, so that will go nicely. It's only 6 ... dinner around here is 8 or later these days.

We had leftovers. I still have soo much ham, even with sending half of it home with my daughter. I am going to be freezing half of it tomorrow, too lazy to do it tonight. It will come in handy for soups and casseroles. Love ham! I have eaten ham with all three meals today. Breakfast was diced ham and scrambled eggs, lunch was ham and cheese sandwich, dinner was ham with all the leftovers. :o

Send Banana Bread!

Over the Easter weekend at our house, salmon, ham and turkey made for our traditional Easter meals. The hams were awesome with not enough left over for an omelet this morning. Looking forward to Turkey Soup for supper tonight, with hot turkey and homemade cranberries on the side. :D
