Tonight is leftover hamburger casserole, most likely after I get home from work again. Working from 3pm to 10pm kinda screws up anything resembling dinner. :lol:

I'm boiling ham hocks as we type. Later I'll be adding lentils and split peas, onions, carrots. I may split the pot and add curry to half. Several days of food the the coming cold weather.

sounds good deepster. love lentils. I'm going to be finishing off a pot of lentil soup this week. time to make more. definitely cold weather food :)

Most likely the last of the hamburger casserole. I have no idea how late I'm working, but it'll be at least 5pm. If it's later, then Dan and I will probably hit Steak & Shake on the way home and mom can fend for herself. It's my last day of work!!

Morning All!

Wishing all those on the Eastern seaboard and in the path of Sandy to stay safe!

Beautiful weather here, Fall is here ... temporarily that is, I'm sure we will be back to the mid 80's before long. Enjoy a little yard work.

My friend who dropped off my vegetable goodies the other day is coming back this afternoon to watch a little football with me; and try my baked collard and artichoke dip. Using the collards he brought me.

I got 5 jars of pickles done yesterday, and making another 5 today. Of course he will get a couple of jars to take with him.

Today he is bringing me some red bell peppers which I want to roast and freeze.

Dinner ...
Chicken Spinach Roll-Ups
Salad, I think a basic romaine heart with tomatoes marinated in balsamic.

Morning.

Have been busy outside putting everything away before the storm that hits on Monday afternoon. Gutters are done & lawn furniture/umbrellas are now in the shed. Rain is expected today & I have blown the leaves away from the doors.

Dinner tonight will be Shepherds pie with a salad. Brunch is a frittata with ham, mushrooms, onions & cheese served with toast.

I would say stay dry Nin, but I don't think so. Hopefully, just some strong winds and rain. That looks like what you will get; but that can get nasty, trust me, I know.

My favorite dinner!!! :(

Hi guys ... well thanks to this web site, I have a new client.
Lady #3 who I cook for on Thurs is going through some pretty intense surgeries, 4 to be exact; and, her son and daughter who visited every Thurs ended. She just had a new baby, and he is transferred out of town. She still wants me to cook now and then; but for now and the next 3 months, she is on a very restricted diet. I will probably take her something nice for Thanksgiving and Christmas however.

Well, the 2 other ladies I cook for; 1 of them, goes to rehab 2x/wk. And she is good friends with another lady at rehab. Anyways, they got talking and it turns out that after a recent surgery the lady is having a very difficult time cooking for herself. She needs help. Her daughter was helping, but it is too difficult with 3 kids, and 2 jobs (single Mom). So, my Lady suggested me.

I met with the client and she is so nice; she wants 3 meals made ahead in the fridge, so she can just choose and reheat. She has no problem making a quick salad, heating up a veggie, or reheating some bread; but, can't do much more.
So, I showed her some of my and other recipes on Zazz and she loved all the pics. She has already been lurking at the photo forum. I don't know if she joined, I doubt it; but she is computer savy and she and her daughter talk all the time online. She is very cool. She just may join.

No allergies, NOT picky; but, she does go low salt and low sugar, but she eats pasta and most foods; just all in moderation.

So, I start Monday. Well, I actually start today. I will drop off 3 prepared meals for her (serving for 4), because she does have a gentlemen friend and her daughter that eat with her at times during the week. And, she loves the ideas of leftovers on the weekend.

Well, on her suggestions ... this is the menu I am cooking tonight and will drop off in the morning. I will do this every Sun.

1. A baked salmon and pasta dish that has asparagus, mushrooms, a light cream sauce with plenty of basil, dill, and mint; and a bread crumb topping; fresh fruit salad. I am taking it baked so, she can just reheat. (pasta is the healthy kind)

2. A pot of pork, white bean, sweet potato, and kale soup; homemade pumpernickel rolls with a honey butter (no salt). She can freeze the rolls and just reheat

3. Chicken cacciatore and brown rice; and salad. I supplied the vegetables (some chopped - cucumber, olives, onions, and artichokes), and the dressing (creamy balsamic) - but she will put the salad together.

Morning,

Church, congrats on the new client!

"Sandy" is expected to arrive around 4pm. The temp is 37F & winds have started to pick up. The Skyway & flights are closing down in a few hours. Dd left for Cancun yesterday. A good time to get out of Dodge. Wind expectation have now increased to 140m/hr with an increased area of 1600km. Hope my trees will be ok? Not looking forward to sitting in the dark for 2-3 days?????

Dinner: I have made chicken curry with rice & it is in the frig. Hoping for power to warm it up?

Take care everyone in "Sandy's" path. This is not looking good.

There is always the grill to cook with. We moved our grill to the garage when Gabrielle hit and I cooked in there. I opened the side door for ventilation, but at least we could eat.
