I love seeing all of those jars lined up - looks great, everybody.
I still have some left from last season so I didn't do any canning this year. In fact, I need to find homes for what I have. DH and I just can't eat that much (I'm diabetic and he was recently diagnosed) so I'll pack some up for friends and family.

I've got some Tomatoes (a mix of store bought and garden fresh) and Mini Sweet Peppers (store bought) in the Dehydrator right now. I've never been successful with Tomatoes. Even though I dry them low and slow in my Excalibur they always seem to "hardcase" on me. I'm sure it's due to the humidity in Florida and unfortunately, we're under a low pressure system right now with tropical winds from the south. Humidity is higher than it's been for days and we've had rain on and off all day. But Peppers always dry really nice for me.

Yes I am a sucker. Two weeks ago we got 2 boxes of pears delivered to the school, well we only need 1/2 a box for the kids, the other half of the one box I made Pear Pie Filling, and diced up 16 cups and put it all into the freezer.
The other box I bought and brought home. I did up 12 qts in Extra Light Cinnamon Syrup, 4 pts Peppered Pear Salsa, and so far 1 batch of dehydrated pear slices. I still have about 42 pears left, enough for about 3 more loads in the dehydrator.
I also grabbed alot of bananas that were over-ripe. I was about to mash and freeze them (3 bunches worth) when it dawned on me to dry them too. I did up one batch on Saturday, then there were still some at the school so I bought those home today and filled the dehydrator again.

Excuse me..Did you ask what we put away this season??
Well let me tell ya...
from the butchered beef:
large and small dog bones. From the cooked bones I put up 22 quarts and 12 pints.
Also 78 - 2 lb. pks of ground beef
Frozen
my garden green beans: 4 gallon bags with bacon and 6 small singles with bacon.
My garden peas: 2 pint bags
my garden yellow and zucchini squash: sliced 7 gallon bags and grated 9-2 c. bags
Corn on the cob: 6 bags of various amounts
my garden tomatoes: 4 slow roasted small bags
as an experiment: I have 1 gallon bag butternut squash unblanched and 1 cleaned unpeeled butternut squash still in the half shells, unblanched.
If the butternut comes out good I will do many more that way.
We don't like pureed foods unless it's like pudding or applesauce.
I also made pumpkin butter: 8 - 1/2 pints and 2 - pints (Man it's good!)
I have more to preserve too!
