No I never use the rind, as I find it a little bitter, as I do the seeds, so I try to remove a few of them also. But it really does not matter either way.
In regards to a blender, I use a Bamix stick blender, I had one for twenty years, and broke it, then went to a cheaper version and within 6 months I blew it up ... so I bought another Bamix which I have now had for about 15 years. I am not sure about anyone else, but this is what I prefer over any others. But you could also use a food processor instead of stick blender if need be.
With the tomato's ~ after roasting them, let them cool and remove the skin, they should peel off really easily. If you are not roasting them and you want to remove the skins ~ just make an X on the bottom of the tomatoes and place them into a pot of boiling water for no more than a minute. Remove them with a slotted spoon & immediately plunge them into a bowl of ice cold water for a minute or 2 ~ remove them from the ice bath and they should be ready to peel back the skin with a knife ( you can just use your fingers) ... that skin will come away so easily for you.
