Ok ... That's All I Can Say. Nothing Too Special Going On Here.
Anyone Starting Shopping For Their Turkey's or Ham, etc?


Today's Cooking ...
I have a big wedding this weekend to prep for; so, I will be beyond busy.
Me - A new recipe for lasagna and swiss chard; which is pretty easy. I figured I would have leftovers for another night.

Also, making a pot of chicken soup for my freezer stash. Actually, the chicken is already shredded, and the broth made; so, just put it all together.

Last night we had a coupon for a free pizza.
Tonight it's my herb-roasted chicken breast, fried potatoes and something green.

Stir-fry for tonight, easy easy easy, I am SO bummed!!! my old kitchen Aid stand mixer broke down this morning :evil: :( I was going to make some soft buttery dinner rolls but now that plan has changed, after looking for hours this morning for a repair company there's no one in my city that repairs KA mixers I would need to send it away and that's not going to happen, mabey Santa will deliver me a brand new one, I'm so lost without that machine :(

I love the something green with chicken; sometimes that is exactly how I feel as well.

Kitten, nice to see you. So sorry about your KA. I got mine at a garage sale; mine has to be ancient. I keep wondering how long it will last. I don't do much baking; but, I do love the pasta attachment, and for what I paid; I've been very happy.
Hopefully Santa is listening!!!! You may need to go see Santa and sit on his lap, LOL!!

My plans changed. I am making my lasagna; but, I have to see my flower gal who is doing all the flowers for the wedding this weekend; and, I am meeting her at her house to go over stuff. Dinner - her treat; margarita pizza (she adds anchovies to hers) and salad. No complaints here - she's a great cook.

My lasagna ... I will cook when I get home. I can put in containers for tomorrow and later on.

We are having soba noodles with a peanut sauce I'll add in some cooked shrimp, that's for dinner tonight!

Blonde, sounds good; I love a good peanut sauce. I admit, I don't make Asian too often; but, I sure enjoy it. Sounds wonderful.

Yes, We Are Half Way Thru The Week, Thank God!

Today's Cooking ...
I have a huge Carnival Wedding this weekend, starting tomorrow. Yes, the entire party, groom/bride, guests ... are carnies. We have games, carnival food, etc. It is interesting.

Today, lots of meeting rental companies for tents, set up; meeting all 8 vendors who are cooking the food, etc for the wedding.

Me: I am cooking for 60+ tomorrow, breakfast casseroles for the "Rehearsal Brunch."

If interested here is the menu: Prep tonight, cook in the am.
- 9 Casseroles: 1 - Chilies relleno egg tortilla; 2 - ham, mixed peppers/onion, hash browns; 3 - bacon, onion, cheese, tomato, bread, potato; 4 - sausage, pepperoni, peppers, onions, mushrooms, potatoes; 5 - vegetarian w/sweet potatoes; 6 - chorizo, peppers, tomato, potato; 7 - peach french toast; 8 - maple french toast; 9 - kale, artichoke, mushrooms, potato, rye/pumpernickel bread.
- Fruit Salads and Sides: 1 mixed citrus, 1 mixed melon, and 1 mixed berry fruit salad (served with 3 yogurts/granola toppings); mini oatmeal muffins w/citrus honey butter; mini bagels w/2 cream cheeses; juices, milk, coffee, tea.

My dinner: I made my swiss chard lasagna last night; tonight, I'm having it for dinner w/roasted carrots.
