I freeze chopped onions all the time and have never blanched. I just chop them, lay them out in a single layer on a cookie sheet, freeze, then add them to baggies so they come out without all clumping together when I reach in the bag for the right amount. I freeze them all in gallon bags and never have a problem getting out the right amount. I do the same with my bells. Never tried to freeze leeks.

Thanks Dissie, I've never frozen onions, but that makes sense.
