What WAS on Your Plate & and WHAT'S for Dinner Tonight 6/12

WHERE DID THE LAST FEW DAYS GO?
Well, been a bit busy here.

Unfortunately, a couple of close friends recently passed this week; both very unexpected. So, the last days were spent cooking for them and their families. A bit going on ...

So, back to normal today.
Lady #3: Eggplant parmesan; tomato salad; crusty pesto bread w/artichokes

Me: Really easy tonight. Using up a spud before it goes bad, some broccoli florettes and ham (both freezer). I'm gonna make a little cheese sauce for the broccoli and ham; then top a baked spud. On the side, a small green salad. I also have some fruit too.

What are your plans?

Good grilling weather for most of us these days. I'm actually doing my spud in the micro to start; and, then to the grill. I'll make the sauce out there too. Nothing better than sipping wine, sitting by the grill. Chill Time! :D

KC, so sorry to hear about your friends. That's always hard.

Tonight it was just marinated grilled pork chops and spaghetti squash with butter, crumbled bacon, fresh thyme and brown sugar.

2 Chops tonight, guess it is a porky night. Cacciatore sounds really good; haven't done that in a while.
And thx guys, it was really a surprise about my friends. The families are holding up; but, always hard. It think they appreciated the food; at least it is one less thing that had to think about. And sent paper plates, plastic flatware and solo cups. Meaning NO dishes for them too.

Buffalo Burgers (with lettuce, slices of tomato, and smoked gouda cheese), and served on a Sesame Kaiser Roll

Leafy Green Lettuce Salad (with slices of English Cucumbers, Orange Bell Peppers, Grape Tomatoes, Croutons, and Kraft Catalina Dressing with Bacon)

Yukon Gold Baked Potatoes (with butter, chives, and sour cream)

Mini Chocolate Chip Cookies

Bartles & Jaymes Pomegranate-Raspberry Wine Cooler
