Stir fry is always good for fresh veggies. I also love a good pasta dish too (just broth and a little wine for the sauce, w/fresh tomatoes). Always tasty. Anything fresh veggie will be delicious!

It was! Easier had nothing to do with it, though... the kids love eating out of food trucks/booths, and we were going to picnic while listening to music (way easier than cooking in a half-moved-into house lol). We just had to get back to the house because my niece and her husband were coming back with two more van loads of stuff and we had to help.

Tonight I'm making Salmon with Cucumbers and Dill (from Diabetic Gourmet magazine), with Simple Summer Cucumber and Tomato Salad (from the American Diabetes Association), with a side salad made from fresh spinach, tomato, red onion, carrot, and feta cheese.

I made beef pepper steak. Simmering now, smells like a chinese restaurant in here! Love the smell of ginger! :)

Morning Everyone!

A nice thunderstorm last night; so, at least I won't have to water the plants today, :). Today, a bit more planting, and lots of housework; pretty boring.
My knee is still really sore; but, a $10 knee brace and bottle of advil, and all is well.

Dinner, just me. Last night - my mac and cheese turned out to be goulash; and, it rained so no grilled romaine. Tonight, maybe more luck.

An burger patty topped with mushrooms, onions, and fresh mozz. Tomato slices and fries.

Hi All!
I have yet to try grilled romaine.... one of these days, soon. I have a bunch to use up.

I never know what I am making for dinner until 3-4pm. So, I'll stop by later or report back mañana.

Last night I made Twisted Tuna Casserole. Quite good!

It serves me right CC, to try to wakeboard like I used to when I was 25, 30, and 35. I have to admit, it was the drivers fault; and, he admitted it. I should of bailed earlier to avoid the crash.

I'll live ... eventually. I can whine for a while I think and get away with it. Although my poker buddies don't fall for it, and my son just laughs - suck it up Mom! LOL

It's hell getting old, isn't it Kim? ;)

I've had some boneless pork chops marinating since last night (recipe I got from F.com ages ago using soy sauce, vinegar, brown sugar, garlic, and ginger), which I'll serve with Luvcookn's #recipe7894 and probably some kind of frozen mixed vegetables.
