Last night I made Poor Mans Salisbury Steak, you know hamburgers in gravy over mashed potatoes and fried zucchini. OMG it was delicious. So happy my zucchini have started! Just adore it!

Dis, sounds like a good dinner last night. Who doesn't like good comfort food.
Have fun today. I remember all the fun festivals we had up in MI. We don't have as many down here, I do miss that.

Tonight we were all home for dinner - which is rare these days - so we had a taco bar : Ground turkey meat, cheese, lettuce, onions, jalapenos, salsa sour cream and tomatoes.

I made homemade beef enchiladas, we had grilled corn and homemade refried beans. I am completely stuffed - no dessert.

Tomorrow I am making kale soup using tuscan kale, hot sausage and potatoes.

The festival was sure fun! The people were from Dover, England! OMG :-o \:D/ Once we started talking to them and the accent, we had to ask, are you faking that accent or what, and they laughed. They told us they come to USA for 6 months during the spring, and summer, tour US and travel around going to festivals with realistic things. It was quite fun and pretty cool. They had really neat things such as real chain mail and were cooking up things I wouldn't try, but others did. It looked disgusting, honestly. They had real body armor, some for horses. Shields, swords and so much more! I saw them demonstrate women fighting off people when their men would join the army and how they did it. That was interesting. Pretty interesting. I never really thought about the families left behind when men would go fight. Those women were wicked with their crude weapons. That was neat. They demonstrated how women protected themselves with men gone. I saw how they made wooden cups and things made from the blacksmith. All of those things took time. Things we don't think about. Like a year to dry out wood to hollow it out to make a drinking vessel. Or how long it takes to make something from the blacksmith. It was very interesting and I am glad I went! I ate a turkey leg for dinner!

But OMG it was hot!

Dis, sounds like a blast. We have a Medieval Fair every year; very similar. They have blacksmith, glass blowers, turkey legs of course which are the best! Jousting match; and a real life chess match. I usually go, it is really cool. Glad you had a nice time. I love festivals like that. There is always some fun crafts too that you can buy.
At least it is finally warm, lol.

Karen, dinner sounds fantastic. I would be stuffed too. But, I probably would of had to slip in an avocado for mine,

Kale soup is delicious. Definitely a favorite. I can not wait until I can plant my kale. Have you tried the baby kale. It's really delicious. Our local Amish market carries it; but, was out last time. It is fantastic for salads. It's not quite as bitter, and really tender.

Oh yeah, Dinner!
Good Morning All ...

Well, we finally got RAIN, yes, H2O. And, it was a good rain, 3 bands late yesterday. We sure needed it.

Today's Cooking ...

Lady #3: A spiral ham w/raisin sauce; roasted asparagus; scalloped potatoes.
Monday, she has company coming; so, the ham will be great for sandwiches or for dinner (they are on their own). I suggest a local market; which makes all kinds of side dishes, which would be delicious for them to pic up, rather than cooking. Then, she, is going to have me package up a bunch in her freezer like I do. Her company will be back next weekend; so, I'm thinking a spinach/ham quiche (breakfast); and maybe a creamy pasta with peas and ham (made with a fontina cheese sauce).

Me, Two scenarios.
I'm either making my 'Boozy Spicy Orange Grilled Shrimp Kabobs.' Marinated in gin and orange marmalade, skewered with onions.
On the side, scallion orange rice; green beans; fruit.
or ...
over to my friends who are making homemade sausage this am. Three (3) neighbors get together and do this every year. But, he has to work tonight. So, as of yesterday they weren't sure.
If they do, I will probably head over around 1. They usually bag up the sausage for the freezer; but, have a small cookout first.
Usually, the sausage/toppings; spud or pasta salad; baked beans; and a couple of dips. Another guy is from WI, and brings down venison sausage, homemade jerky; and some good WI cheese too.

Me ... I'll take pickle dip, and some good IPA beer.

Went to my mothers today, and she loaded me up with veggies. My garden really stinks compared to hers! We had fresh potatoes, just boiled with butter and S&P, fresh green beans, kielbasa fried with fresh onions and bell peppers, a salad made up from fresh tomatoes and cucumbers, drenched in italian dressing. Very delicious dinner!

She gave me a cauliflower bigger than my head, cabbage, potatoes, broccoli, cucumbers, eggplant, tomatoes, onions, green beans, wax beans, bell peppers, and zucchini. Wow, what a load of wonderful food! She also ordered a 1/4 beef side and hasn't finished her last 1/4 side, so she sent all that meat home with me. Steaks, roasts, hamburger, lots of stuff! Amazing! Won't have to buy groceries for a while! Well maybe bread and milk, but you know what I mean! ;)
