I have the poached chicken, still. Last night I did a shredded chicken/teriyaki/avocado sandwich.....delicious!! Tonight I'm doing a shredded chicken sandwich with my fave hot 'n vinegary BBQ sauce....pickles and black olives on the side. I'll top it off with some grapes as dessert.

My day ... sort of changed again. Post later. It was such a crazy day.

Mmmm, Mmmmm, on the catfish. I love it. Hope you are able to "pull something" out of a hectic and changeable day. Mine has been laid back and assessing what are the things I need to take care of before Winter. By Nov 1st we are much in the Winter mode here, and time is flying!!!!

Well, my friend and I bought a property to use as a rental. So, we went to that closing after the bank (certified check I needed), only to find out, I have lost my license. Another long story, I know when this weekend.
Got home from that, the store, Walmart, and went to cook catfish.
My son called.
" Matt and I are coming over, anything for dinner " Matt doesn't eat fish. OK.
So, unthawed the sloppy joes, I just froze this am. I had cabbage in the fridge, so a quick slaw. Also, I just cut my carrots for my dinner, well, they went to those guys. Did some celery too with ranch dip; and, thanks to OreIda for some quick fries I baked and then topped with a cheese sauce and jalapenos. Also, cut up some melon; grapes, and peaches. A cold beer; and they were happy campers.

Me: it was 9pm and they just left. I could of made my catfish, but I was so tired; I had a hard boiled egg (I had made 2 extra earlier), with some cheese and crackers, a little salami too.
I guess that wasn't all that bad.
But, I was craving catfish! :( I guess tomorrow.

Let me tell you, the day was full of putting out fires all day.

Hey, my son was happy; he had a nice day yesterday for his birthday, and enjoyed dinner tonight; so, that is all that matters. I can survive on some cheese and crackers.

Deepster, that is the one thing I do not miss with FL. No winterizing. I remember that well from growing up in MI. Lots of work.

BBQ Chicken sammy sounds good.

I stuffed veggies last night with rice, tomato sauce and hamburger, topped with cheese. Enjoyed that again for dinner tonight. Probably tomorrow night too! :lol:
