Another cloudy, and could be rainy day here. Not as bad as the other day ... but more rain. At least I have AC, but the ordeal isn't over.
My dinner was a disaster last night. AC guy got here at 6:45, and left right before 9. Yes, 9pm, it was dark out.
I planned my jalapeno fish. NO way, did I feel like chopping, garlic, onions, tomatoes, at 9pm; and I just wasn't in the mood for anything. So, the fish was thawed. I decided to do a baked spud (microwave), grill the fish which is easy, and a simple grilled romaine heart with a bottled dressing.
Well, nuked the spud for 5 minutes, then off to the grill. Lit it up, then added the fish and the spud to finish. Went inside to answer the phone, and it started to pour. My fish got soaked, some fell through the grates, pretty much ruined the fish.
Anyways, came in from the grill with 1/2 of a water soaked fish fillet; cut the potato to add butter and sour cream. The potato had a bad spot right in the center. Dug that out. Add some butter and sour cream. Dressing, I had blue cheese, ranch, and thousand. I chose ranch which I rarely eat, but why not. Well, 1 bite of the potato ... it was bad, the sour cream. Scraped it out and added some cheese, and melted it. I really am not too fond of cheese on spuds, but gave it a try. Ate the salad, but ranch didn't taste right either, I think the sc spoiled it for me.
So, dinner was a total disaster.
On top of it. I really wanted to use the spud in my dinner tonight, but that isn't going to happen, so. Just a crappy night cooking wise.

Today's Cooking ...
Lady #1: Pasta with a zucchini, walnut, and goat cheese sauce; radish salad; pesto bread
Lady #2: Same, but roasted grape tomatoes and olives; garlic bread
Me: Work, but, the weather may cancel it. Don't know until later. If work, the boys said they would bring something. If not, I have my leftover beef tips and some rice. I guess just that. I can add some mushrooms; or make some lima beans on the side. Not what I wanted or planned, but oh well. Might as well use up the leftovers.

Later, I am making a regular tomato based gazpacho, and watermelon gazpacho shooters to take tomorrow. I thought about mini shrimp skewers, instead, I am making mini pesto bread sticks for the gazpacho. Everything very easy to prepare. And tupperware pitchers, and disposable plastic shooter glasses make these really easy to take.
No AC again, so house open; at least it is breezy, just wet.

My friends 4th party, he has a big barn. I mean, BIG, and deluxe. More like a 5,000 sq ft house. So, we have cover if it rains. Made my ricotta, and gazpacho tonight. Will head out around noonish. hopefully, the rain will be light if anything. Fireworks late if possible.

Shapes. That mac and cheese ... that's dinner for me. Add a salad, and I would be a happy camper.
Leftovers worked here. I was lazy
