I finally had a bit of time to join here. Lots of familiar names from the other site. Life has been pretty hectic for us the last couple of years & still is, so I am not sure how often I will get on here. Hopefully I will have more time this winter.

I need to get used to this format, and browsing methods for this site, please be patient. I have 18 years of restaurant experience, not counting fast food in high school, and have been into cooking since I was about 5 yrs. old. I enjoy trying
different methods, styles, and ingredients. I hope to learn more and to share my knowledge with those interested. I hope to hear from you all, and to have some fun and meet people who have a passion for food and a good sense of humor.
