Foxy, is it possible to bring in something for each individually wrapped, rather than a tray for the collective group? That way everyone is assured something. :)

Giving gifts is supposed to be something that you enjoy so I completely understand not wanting to participate when you receive nothing but angst from the receiving group. I wouldn't do it either.

Well, so far it looks like we will be somewhere around 55-60 degrees on Cmas, so we are grilling steaks for Cmas dinner! Just because we can. :lol:

I will also be doing my ham and beans outside for Christmas Day if possible. So far, my son has not told me what he wants yet, so I can't plan.

We actually have a plan for food! Everyone always brings something, but this year we've been unusually unsure what we're doing. So...mom is getting a ham, to eat as-is or in sandwiches. I'm doing cookies, breads and pineapple-mandarin orange fluff, my sister is making cheesy hashbrown casserole, another sister is bringing a pickle and cheese tray, and my third sister is doing deviled eggs and green onions wrapped with pastrami slices with cream cheese. Mom is also doing two lemon meringue pies and two pecan pies.

Made GF cookies for one DD and a senior friend who is Gluten Intolerant too. Also made Egg Biscuits for DS and his fiancee! Will ship those tomorrow!
Next I will be making Chocolate Truffles and Chocolate Covered Cherries for the other kids.
Still have to frost the Egg Biscuits and put the sprinkles on! Then they dry and I'll freeze them til tomorrow, then box them up and off they go! :D
Hubby went to his uncle's funeral today with his parents. I went to the prayer service last night and it was really nice to hear all the wondeful stories and see the video of photos taken at different times of his life.
It is hard to believe that he and his wife are gone...sigh...
Full lives and now gone. In the blink of an eye.
What a time of the year to lose two much loved family members within three weeks of each other.
I have been to enough funerals already to last a lifetime. No more this winter please! Very hard.

Onto a lighter note...
The photos of trees and food are spectacular! Makes me feel cheery! Thanks!

Two recipes from a cookbook that I bought from B&N! Called - "GLUTEN FREE MADE SIMPLE"!
The other cookbook I purchased from B&N is "GLUTEN - FREE CHRISTMAS COOKIES"!
DD who is gf likes Chocolate Chip and Double Chocolate! So that is what I made for her!
Used Betterbatter all-purpose flour for the Chocolate Chip and Tom Sawyer all-purpose flour for the Double Chocolate Cookies.
I added a little more flour to each recipe because the different combinations differ with each company. The recipes called for Domata and it is on backorder, so I used the ones that I had on hand.
They were delicious!!!!!!!!! Really successful batches! Everyone who sampled said they couldn't taste the difference and they really liked them!

Chocolate Chip Cookies

2 1/4 cups GF all-purpose flour
1 tsp baking soda
1 tsp salt
1 cup butter, softened
3/4 cups granulated sugar
3/4 cups brown sugar
1 tsp vanilla
2 eggs
2 cups gf chocolate chips (Nestles)
optional - 1/4 cup chopped walnuts

Preheat oven to 375 degrees.
Same routine as when making regular Chocolate Chip Cookies.
Bake for 10 minutes. Makes 24 cookies.

Double Chocolate Cookies

1 1/2 cups granulated sugar
1 cup butter, softened
2 eggs
2 tsp vanilla
2 1/4 cups GF all-purpose flour
2/3 cups unsweetened cocoa powder (Nestles)
3/4 tsp baking soda
1/4 tsp salt
1 1/2 cups dark chocolate chips
optional - 1/2 cups chopped walnuts

One recipe Powdered Sugar Drizzle

Preheat oven to 350 degrees.
Same routine as with the regular Chocolate Chip Cookie Recipe.
Bake about 10 minutes.
Cool slightly on a cookie and transfer to a wire rack. Drizzle with Powdered Sugar Drizzle.

Powdered Sugar Drizzle

In a small bowl, stir together 2 cups powdered sugar, 3 Tbs milk, and 1 tsp clear vanilla or it isn't a nice white color.
Drizzle over cookies when cool.
I use a baggie and clip a corner. Less clean up. Works great and I throw it out and don't have to clean out a decorating bag! :D

This is a great combination for cookie baking if you are interested -

2 cups white or brown rice flour
1/3 cup sweet rice flour
1/3 cup potato starch
2 tsp xanthan gum

Mix all ingredients together, and store in refrigerator in an air tight container. I make more and freeze it!

Been experimenting and it's kinda interesting!!!! :)
Breads are not so easy, but cookies are fun and come out really good for me!!!

This morning I bagged ten bags of goodies for Sweetie to take to work. Each bag has cookies, white chocolate dipped pretzels, peanut brittle, candied almonds and a fruitcake cupcake. Sweetie better tell Santa that I have been really, really nice. :lol: On to gift wrapping now. :)
