Rac, then definitely go with the melon. I love it too. Gazpacho sounds good, I am making some for the ladies I cook for.
I think it will be a fantastic party!!

KC, I can pretty much guarantee the food is going to play second fiddle. We're distributing proceeds from my MIL's estate. There are going to be some happy grand kids getting big fat checks. I could probably feed them dog food and they wouldn't care.

The story with my red velvet trifle goes something like this......... I had a red velvet cake which did not
rise to my expectations. Instead of throwing it out (too much trouble and too darned expensive) I froze the layers. I make the trifle with whipping cream, pudding, etc. Since red velvet cake is lightly chocolate, I think the ganache will put a more chocolate POW into the dish. I am going to use a little extra cream so it will moisten the cake as well. Probably drizzle on top too. I'd be happy to share with you.

I hate that when that happens!

Freezing it for a Trifle is a good idea! I don't think I have ever thought of that, duh. It might of saved dh and I a few pounds instead of eating the "not up to standard" cake.
Mmmmm, the trifle sounds really good! Yes, please do share....send it overnight express.

The flop was Christmas Eve so I had to bake another red velvet cake immediately (Sweetie's gdaughter would not be a happy little girl without a red velvet cake for Christmas Day). Is just wasn't an option for Sweetie and I to eat it at the time. The second cake was absolutely perfect! All the same flour, sugar, etc, same day, same oven, same pans......WTH! Into a vacuum bag and off to the freezer for the flat one.

I'm thinking the whipped cream just and pudding just might separate even shipping overnight. You'll just have to pop in for dessert and coffee.
