Last month she made a barley flat bread for our Moroccan feast and she kept calling saying that the dough was sooo weird compared to what she usually works with. It turned out good but was very heavy. Strangely all the young kids loved it. She then made a loaf with half regular flour/half barley flour and just mixed it to eye and it turned out wonderful!
I can find most of the whole-grain flours at Henry's/Sprouts and Whole Foods but have also ordered some from Amazon.com
Anyways...I would love some of that 1973 sourdough starter GW! That is such a cool find! What is involved in using it?

I've never tried a 100% whole grain recipe, usually has at least 25% unbleached bread flour. DH doesn't care for 'thingss' in his bread, so no seeds, etc . . . except caraway!

I use 7-10 grain hot cereal that I cook so none of the grains are hard. After cooking the cereal if you are in a rush you can add cold water and ice cubes to cool it down, or let it cool down to room temperature and use warm water without ice cubes.
I have added different things to it for the crunch associated with multi-grain breads, my last batch was pecans and something else I can't remember right now, could have been sunflower seeds, I normally use flax seeds, but I was all out. The pecans turned out great, really went with the flavor of the bread.
The bread turns out better if you leave the dough just a bit sticky, and for sure have a warm place to rise it, I have had a few batches of heavy bread because my house just wasn't warm enough.
