I cut the recipe back to 2 eggs, added a jalapeno, left off the mozzarello. It made 3 muffin cups. I had it for dinner

With my ankle I haven't been eating the healthiest, but using on hand items. All these photos are fantastic as are the recipes. Delicious to all the posters for photos and the recipes. Great job. I get hungry just looking at them.
