I think I will be doing rack of lamb. The available fresh produce will determine the rest.

I am SO jealous of you both! No way I can get lamb down here! Mikekey, I love your menu - those fondant potatoes sound wonderful. I'll have to try those with my PORK roast.

Pork is good, too ;) So, no sheep in Costa Rica?

LOL... apparently not many! And when I do find it, the cuts are incredibly inventive! You never know what you're buying! The pork, on the other hand, is pretty amazing. A few weeks ago we went up mountain to visit our bartenders mother for a homecooked meal. Homegrown pig - OMG. And homemade sour cream. Double OMG. Thought I'd died and gone to heaven!!! So though we can't get lamb readily, other things make up for it!

Hubby's company always gives out a fresh ham. They get it from local butcher shop, so thats always wonderful. It comes to us not even frozen!

So, I will have ham, augratin potatoes, asparagus, homemade dinner rolls, my sausage stuffing, and depends on whats a better deal, broccoli or cauliflower, could be both! I have frozen peaches from last year, so probably will be a peach cobbler for dessert. I just found them in the freezer, forgot all about them!

Mikekey, the ham is going into the electric roaster, so no basting, the rolls will come from my ABM, so only shaping and baking. The real work will be the dressing and the augratin taters. Veggies will be steamed in microwave. Not hard at all! But it will be delicious! I know that! OH yeah and asparagus will be roasted.

You guys are definitely ahead of me.
Since it is just me (I will invite my son, but I think he has plans); or, I may have one or two of the poker guys over for dinner.

I usually do a small rack of lamb. Or, I may go to my butcher and just get 3 lamb chops - depends on the cost this year. Asparagus is usually a must or minted carrots; and I usually do duchess potatoes - just because they are fun.

And, I will be doing an Easter dinner for all 3 ladies (all similar menus); but, appies and desserts for them. All 3 have family in town, so I don't know the plans yet.

Since we have plans for Easter,we are going to have
our Easter dinner on Good Friday.
Roasted Turkey (which I've had the turkey in the freezer since it
went on sale after Christmas @ .59 cents a lb. )
Store bought dressing (in the freezer, 2lbs. was 5.99 bought for
99 cents. And I've had it before,and it's not a bad dressing at all.)
