Menus for May 20-26

Hello friends - sorry I've slipped under the radar; last few weeks of school have been crazy busy, but now summer vacation starts for me. Now that I'm home, I hope to get back on track of eating better.

Monday - Firecracker shrimp, creamy lemon rice
Tuesday - Cajun citrus-honey mustard marinated chicken strips, baked potatoes, cut up veggies
Wednesday - Pork soft-shell tacos, salsa, chips
Thursday - something with salmon

Breakfast - cereal
Lunch - leftovers, salads

I hope to try roasted strawberry balsamic vinaigrette I saw on a blog this past week. :)

That all sounds so good - especially the firecracker shrimp!
Here are my meals so far:

Meal #1: Steak Tips with tomato artichoke gratin
Meal #2: Crock Pot Angel Chicken
Meal #3: possibly a ham steak with baked zucchini
Leftovers for 2 nights + 1 night to eat out or grab something from the freezer

Lunches will primarily be leftovers and mixed salads this week - exam week. Might bake something for DD if she wants anything.

Well, the tacos were moved to Monday, unexpected errands popped up and shrimp is tonight. :)

My dd vetoed the ham steak, so it looks like a ramen night instead. I still plan to make the zucchini one night though. Angel Chicken is cooking in my new crock right now - first thing I have tried in it.

I have been out this week due to a flu bug. So, everything I planned didn't work out.
I am making pierogies tonight with roasted beets, but otherwise; not as planned.

Friday I'm starting fresh with my menu as I will be back to cooking. The flu is not exactly when you want to cook :(

Tomorrow night I think I can going to rely on some soup and make a stuffed portabello and call it easy.

Friday, I have company, so I will start to make a new menu again. Although I have several nights I will be working; I may make a few ahead meals and then take them with me.

Hope you feel better soon.

My crockpot worked pretty well - much better results than my other crockpot. The chicken was still overdone for me, but not bone dry. It was at the point where people who like very well done chicken seem to prefer it, which for me is overcooked. Anyway, I will just cut down the time by an hour next time I try the recipe (it was low 5 hours, I should have checked it at 4 hrs, because 5 sounded long).

A good recipe, would make again maybe, but not quite the wonderful impact I expected after seeing it on so many blogs.
