Menu For March 24,2012 ~ March 30, 2012

This past week everything got made except the Spaghetti. Had a Migraine so Hubby brought home a light dinner. Will put the Spaghetti on this weekends plan and try again :)

Saturday ~ Spaghetti, maybe make some Garlic Bread to go with.
Sunday ~ Burgers on the grill, and making Pretzel Rolls for them. Probably just some Special K Chips to go with. Or maybe Kale Chips?!
Monday ~ Cheese Omelettes, Hash Browns for Hubby, and WW Toast
Tuesday ~ Chicken and Black Beans, cooked in the crockpot.
Wednesday ~ Tuna Sammies and Sweet Potato Fries
Thursday ~ Mahogany Beef Stew
Friday ~ Shrimp, just haven't decided how to cook it yet.

Well, I did get a lot of last week's menu made - that turkey meatloaf finally came out of the freezer and it was 10000x better after freezing. I have never frozen a raw meatloaf before - it really added to the flavor. I also made my corned beef meal, which my daughter says is her current favorite meal I make. She is a skinny picky girl and she polished off almost the entire corned beef herself. It is gone - she just kept going back for more. She never eats like that!

Anyway, the only thing I had planned that didn't get made was steak, which is fine because that keeps just fine in the freezer.

DD will be away this week, so I can low carb to my heart's content or not cook anything if I want to and just have a bowl of soup. So the plan tentatively will be:

Meal #1: Tarragon Chicken Breast (low carb dish), with mashed cauliflower
Meal #2: (from the freezer) Baked Cod with a side salad
Meal #3: Roast Chicken with either leftover cauliflower or some green veg or salad
Meal #4: Steak or a Burger, w/avocado salad (just iceburg lettuce, tomato, shredded carrot, avocado, ginger dressing) or a Vegetarian main dish (maybe Spargel with Hollandaise or a Portobello "Burger")
Meal #5: Leftovers, using up chicken, or possibly soup
Meal #6: Eat out - Indian or Asian
Meal #7: Leftovers using up veggies as a main dish - maybe a garden omelette or something (this might change) or maybe Black Bean & Corn Quesadillas again.

If I make any dessert this week, it will most likely be jello or fruit salad, since I will be eating the whole thing.
If I make any bread, it will just be dough to freeze for when dd is back to get ahead.

I am also planning to make a batch of jam this week made from Red Zinger tea and also possibly some Lavender Jelly. I keep forgetting to can stuff, so hopefully I can get my act together.

Salads will just be basic greens with veggies most likely, since I don't need anything for school lunches.

Great looking menu Heather. I didn't know you liked to low carb, learn something new everyday :)

I actually have a really hard time doing the low carb thing, since I love fruit and baking so much. However, after trying it a few times, I know I do lose weight that way. My divorce weight is still on me and the divorce ended 1 1/2 yrs ago now - time to jump start the weight loss again. I love the low carb recipes usually - I am going to try to make more low carb stuff and just gradually phase out some foods that are higher in carbs, at least until I get a nice chunk of weight off again.

Great meals guys; HF, good job with the low carb. MM, great planning.

Me ... with my ankle injury and I won't really know what will happen until Monday or Tuesday ... this is my new plan.

My old plan was

SAT ... Chicken Pot pie using my leftovers, tomato slices and fruit
SUN ... Wild rice and turkey soup; cheese white bread; and leftover Italian Beef over a baked spud
MON ... Poached salmon; egg caper sauce; steamed broccoli; roasted sweet spuds
TUES ... Soup; salad with my no oil dressing
WED ... Red beans and rice (new recipe); fruit
THURS ... Freezer salisbury steak patty into a meatball sub type w/pesto & cheese
FRI ... Out

Now, my new plan; I won't be cooking too much this week. Depending if it is just crutches, or surgery; it will make a difference what I do. I can still drive, so I can go to the store. And I will continue to cook somewhat, but something easier - as walking with food and crutches, is not easy.

I will eating my leftover chicken, but just reheated w/frozen lima beans or corn
Corned beef I froze, but I will make reubens this week, they are easy
Salmon is frozen, but I probably just pan sear with a baked spud
Soup in the freezer and a grilled cheese
And, I also have a frozen salisbury steak patty which would be easy to heat, top with sauce, cheese and melt; maybe a microwave rice or pasta dishe

So dinners will be made; I may throw in a chinese take out too; but continue to use what is on hand, just makes things a bit easier is all. I also have a frozen pizza; and a container of a gingered pork casserole I made. So I have plenty I can just micro and add some fruit.

Not much into pain meds; so far only 3 asprin in 3 days ... so I may have to pick up some vodka or bourbon ... medicinal purposes that is! :)

I really do hope it is just crutches and no surgery required. Ugh.. I wish you a speedy recovery.

Thx HF, I shattered my right ankle on a very similar accident 7 years ago and 4 surgeries and 1 1/2 yrs recovery was not fun and expensive.

This feels very similar, but it is changing every hour hour it feels and I have full mobility of my foot which is wierd. Just can't step on it. I will have it looked at.

I could handle crutches, walking cast would be better. I'm all alone, so it isn't easy to take care of things by yourself. Ever try to vacuum with crutches :)

Thx MM, I'll survive, but it isn't easy, I'm just hoping for something good tomorrow. Because I won't be able to work at either job for most of the time which really hurts the income. NOT fun to look forward too.

Damn my furr babies!! and my fault for not turning on the light.
