HF, my friend who does low carb always eats her thick chili in small lettuce cups rather than chips of corn bread. I tried it once and it wasn't bad. She uses iceberg because they are much firmer. Just a thought. And how about the parsnip fries for you.

I thought about kabobs too. They are easy, inexpensive, but still really good and easy to customize.

Parsnip fries could be a good choice for me. I love parsnips.

I was thinking I could set out bowls of stuff to skewer and let them choose what they want, then pop each set of sticks into ziploc baggies with names on them, pour in the marinade, and grill later. Even if I don't do that now, I might do that in the future regardless, just to make it easy prep for me. I am hoping we can get a real grill set up when he's here.
