This is a work in progress but a good start. Just may change a bit.
Saturday ~ Hoping if FIL feels well enough we will take dinner over to them, and spend some time. He loves a local pizza joint, so fingers crossed.

Sunday ~ Making a Turkey Breast with Mashed Potatoes and Corn, Gravy and Rolls or Biscuits too.

Monday ~ Tuna Casserole

Tuesday ~ Pork Chops, Applesauce and Broccoli

Wednesday ~ Turkey Sammies: Turkey, Provolone, Bacon with Lettuce, Sweet Onion. KC, got a recipe for a great Aioli for this one?

Thursday ~ Thinking Lemon Rice Soup and a Greek Salad (take out)

Friday ~ Shrimp with Pasta...Garlic, Lemon, Butter....yum

Only baking to be done is for the Boys treaties

Brekkies here are always simple. Either Greek Yogurt, with or without Granola. When without, I mix in some Organic Honey and Cinnamon.
Lunches are always light here too: Protein Smoothie or Fruit and Half a Sammy (Peanut Butter with Banana or Neufchatel with Walnuts)

Just took on a new project for a friend. A 10-12 page newsletter for her Mom's retirement community. It includes a full directory, social calendar, and lots of pics and personal stories. They do 1 per year this size and then 2-3 others which are smaller. I will be doing those too. That will definitely keep me busy this week, along with my normal jobs. The next 2 weeks I am going back to my pantry and freezer clean out - I'm really going to try to stay under $25, that doesn't include milk, eggs, cheese, and kitty food.

Me: Over to a friends for a BBQ (I'm taking a baked corn casserole per request)

Still trying to get the foods from previous weeks eaten. I hate when I buy food and then have to freeze everything because it doesn't get made. It seems like between illness and softball schedule changes, my menus have just not been happening.

So... still hoping to get the following made some time this week:

Turkey Meatloaf (from my freezer), with whatever leftover veggies I have on hand already
Steak or Steak Tips, with asparagus or broccoli
Shrimp - not sure which recipe yet, with whatever veggies I have on hand

This week I will likely eat leftovers/sandwiches or ramen three nights, and eat out 1 night. I need to make sure the old food is used up to make room for St Paddy's Day on Saturday!!

Also hoping to get 2-3 salads made this week - pasta salad, fruit salad, and possibly a rice salad with zucchini that I haven't made in a while.

I will probably also make some sort of veggie soup to clean out all the veggies in my veggie bin - lots of stuff hasn't been getting eaten and will spoil if not turned into something this week.

I need to make some wheat bread or rolls this week - found an opened bag of flour in my pantry that I hadn't realized got opened before my very full tub of wheat flour had even been dented. I'll probably make dough and freeze it and use one loaf to eat on throughout the week.

Saturday - BBQ pulled pork pizza from leftover pork on homemade dough - AMAZING!

Sunday - chicken chili casserole, green giant buttered corn copycat

Monday - probably leftovers

Tuesday - ??? can't remember

Wednesday - tater tot casserole

Thursday - highschool track meet family meeting and dinner (sound exciting, doesn't it?) I'm sure it will be pizza

Friday - swedish meatballs over egg noodles

Sunday - Jerk turkey wraps, sweet potato fries
Monday - Salisbury steaks, buttermilk mashed potatoes, green beans
Tuesday - Leftover night
Wednesday - Citrus turkey tenderloin, brown rice, veggies

Friday - ???

Breakfast - oatmeal or Egg Beaters, fruit
Lunch - Leftovers as much as possible

MM,

I missed your question on the aioli and just saw it. Sorry.

My 3 favorites I use with a turkey dressing is a pesto aioli. I like to make my own, but you can also use a store bought pesto too.
Simply mix pesto with mayo (make sure to drain the pesto a bit, so NOT too oily. Mix with the mayo and spread on the bread.

Second, if you don't have the pesto, you can also mix basil, green onions, lemon zest, garlic; and a mix of mayo and sour cream. This works very similar.

Also adding a pinch of dijon mustard also works great to the simple basil aioli

Second, a sundried aioli; sun dried tomatoes, mayo, shallots and black olives

Third is the avocado aioli; a mix of sour cream and mayo, avocado, basil, shallot or scallions, and a pinch of lemon zest.

And if you grill with melted cheese, mix equal parts BBQ and mayo, will minced shallots. It is wonderful on a turkey sandwich.


Those are my favorites. You can also mix equals parts mayo and sour cream to lighten up the sauce. And, I always mix everything in my mini food processor to make it smooth if possible. Otherwise, just mince everything very fine.

And I know you said you were having lettuce on the sandwich; but if you don't use lettuce. Process arugula with a little mayo and sour cream, scallion or shallots, lemon zest and a pinch of fresh basil. Process until smooth. It is great on the sandwich. Similar to the pesto, but a bit smoother and lighter.

Picked up a fresh loaf of Farmhouse White, Green leaf Lettuce, along with Provolone and Sweet Onion should be a hit!

Your very welcome. All good and a bit different, but all offer good flavors. I always have pesto ... even when it is store bought. Great to mix with things. ENJOY
