Christmas Dinner - Roast Pork with Crackling

Actually this is a traditional Danish Christmas Eve dinner but we had it for Christmas day dinner. Everything turned out perfect. Thr crackling really crackled. The secret for great crackle is to boil, yes I said boil, the prepared roast for 5 minutes. This opens the scored cracks so the salt can get right down between the cuts.

OMG Bergy, you may have outdone even yourself on this meal! That meat looks like something in a magazine! So wonderful! Honest, this really made me drool! And that cabbage, I could taste, I swear! I love that dish with cabbage. My favorite veggie!
