Poached Eggs in Marinara Sauce

A really quick, tasty, and rustic light breakfast/brunch/lunch/dinner.

Use about 1/2 cup marinara sauce for each egg
Bring the marinara sauce to a simmer and add cayenne pepper if you like it spicy, a little sugar if you like sweet, and fresh chopped basil.
Leave heat low and slide in an egg (or however many you're preparing) Season with salt and pepper to taste.
Cover and allow to poach in the marinara.
Serve over toast (any crusty bread is nice)

Thanks, shapeweaver! If you have a little leftover marinara sauce from some other recipe, this is a good way to use it up. I hate to waste food, but you can only eat the same thing so many times in a row! :lol:
