The Review: Made your recipe for a pre-NY family games night dinner party. I prob added extra butter & I also took the liberty of making it as a casserole since our guests had variable appetites. Siggi once confessed he married me for my twice-baked potatoes, but I like yours better. Adding the mushrooms & red bell pepper expanded the flavor profile while adding more texture & color. Oddly, green onions are nearly impossible to find in Iceland, so I subbed leek & topped the casserole w/a sprinkle of dried parsley. It really did look like Christmas on the table & was well-rec'd by our family. Thx for sharing this recipe w/us. I expect it will be made again soon.

The Pic: Posted a "fresh from the oven" shot & there wasn't time to get a plated pic, but I may manage an individual portion using leftovers later today.
