"Made for the Billboard Recipe Tag Game – I’ve made similar cakes using eggnog (because I love it), but never anything that also resembled a light fruitcake. Besides its lovely taste, what I liked most about your recipe was the choices you allowed. I opted to use 2/3 cup halved red glace cherries + 1/3 cup dried cranberries for the fruit with 2/3 cup walnuts. BUT I think any combo will work as long as one follows the amts you listed. I used a deep 9x8 inch baking pan, mainly because pan sizes differ in Iceland & I wanted to play it safe. Thx for sharing this great holiday recipe.
