I didn't think it was complicated, but I've been cooking duck for nearly 5 decades thanks to my Czech Great-Uncle Emil Placek. I was used to the roasting method & ingredients. My sides were different - Usually kraut (made w/applesauce) & dumplings. You make the basting glaze, roast the duck & rest it while you make the sauce. You do pay more attention when you make a new recipe the 1st time, but I'll be on auto-pilot next time. We're having 3 house guests from Canada in early Nov & roasting duck breasts for 1 of our dinner meals.

I seem to have lost yesterdays post thanking you for your incredible photos. TwisSis, awesome photos! That duck is roasted to perfection, I can almost taste it, so much so sees to duck on my shop list for an early Thanksgiving weekend meal for the gran and I. I love duck as did dh, the rest of the family not so much. These days I have a gran who enjoys as much as I do and also loves to cook, the recipe a combination of recipes we have used and has become our go to. Thank you for taking the time to add your magazine worthy photos to one of my favorite holiday and special occasion recipes for duck. Will watch for your duck breast photos, I need to get out more as have never seen duck breasts at the market!
