Mashed Carrots

I had so many carrots to use up and thought....Why not mash them to serve as a side!

The consistency was a little off, but using less stock will help next time.
These made for a nice change, and probably would be healthy if I cut out the butter .....but I guess I will never know or find out about that one. ;)
and I also made these drumsticks during the week.
DH loved them.
