How to make this dish *more Mexican*

I'm trying to put together a new dish/recipe, Mexican Chicken and Noodles Casserole. Here are the ingredients I have so far. How can I make this more zesty-Mexican in flavor?

Boiled chicken
noodles
stewed tomatoes (drained)
marinated artichoke hearts (chopped)
sauteed onions and peppers
oregano
chili powder
Mexican cheese

Thanx for your ideas!

well I always use taco seasoning spice in place of chili powder I think it has more flavor and add in a can of green chilies

Cumin is another great spice for Mexican dishes Pat! Hope your new recipe turns out wonderfully!

First, is the chicken already boiled, because if not, you could add lots of flavor.

Second, artichokes to me are NOT mexican.
Do you have olives, cilantro
jalapenos or poblano peppers
cumin is a good spice, oregano is ok
garlic a must
Maybe add some salsa

I would try to do a chicken type of ragu over noodles vs a casserole. That would be my thought. Or a chicken stew ...

I'd go for boiling the chicken with some spices/herbs, like cilantro and more oregano, that would add a lot of Mexican flair. Add some more spice by adding a chopped fresh (seeded) jalapeno with the peppers. Garnish with more cilantro and maybe even top it with crushed tortilla chips.

The chicken is already boiled -- left over from another dish

I'm using the artichokes because my wife won't eat olives or peppers (except for the canned green chilis which I will now include) and I felt a need to include something. :lol:

Ah, but artichokes ARE Mexican! At least according to my Mexican Family Cookbook, which has a recipe for Cream of Artichoke Soup. At worst you'd be making a California-Mexican dish.

I would not use the chili powder. I would use cumin, cilantro, and oregano, as well as the canned chilies.

You might try substituting Ro*tel for the stewed tomatoes. If your wife is avoiding hot/spicey when she says "no" to peppers, try the "mild" version.
