Fresh Mozzarella

I bought a package of fresh mozzarella at Costco last week . . . of course it's mondo size, so I'm looking for some uses, besides caprese salad. Any suggestions?

Slices about 1/2-inch thick, then layer with prosciutto and fresh basil leaves. If you want, you can melt it on crackers or English muffins, but it's good all on its own. It's supposed to be an appetizer, but I make it dinner. :D

Thanks Felix . . .hadn't thought of melting it. Wonder how it would be baked in a pasta sheet . . . like brie?

I love to eat it on sandwiches sliced fairly thick. Great with roasted veggies in the sandwich. I also add some to salads.
