Suggestions please

Hi, I am not the world's best baker but have had an idea for a cake I would love to try. It is an apple and Advocaat (Eggnog) cake, the apples being sour cooking apples stewed in the Advocaat then used in the cake. How would I balance the thickened sauce with the cake ingredients? I.E. would I need to add more eggs?

hmm, well first I was wondering if the eggnog wouldn't curdle when you put it in the hot pan with the apples?

I dunno if you can simply make an eggnog cake and then add the stewed apples to the batter. Hopefully someone else will have a better idea.

Ninya, I have no experience in baking with eggnog, but it certainly sounds wonderful! Lets see if we can round up some Chefs that have experience with this

*after re reading your original post, is it the stewed apples you would want to add to the cake? or the Eggnog that the apples were cooked in?
I think either way, an Egg or 2 would be called for, as that would be the binding agent. Maybe an egg and an egg white, or just egg whites?
Will be interesting to learn...

I want to stew the apples in the eggnog so it just becomes a sticky sauce almost mostly reduced to a goo, Roxanne I would use the commercial Advocaat we get here and that is very stable so not worried about any splitting. I am hoping to use the nog/apple mix in the cake as part of the ingredients rather than a topping. Like an apple cake.

hmm, I get what you are saying. I was thinking you could have added the reduced stewed apples to an eggnog cake batter - not as a topping. I think if you stewed the apples in the eggnog it would be like a custard so if you can find a basic cake recipe that uses a custard or maybe vanilla pudding (that's already prepared) in the batter it could have similar outcome if you put the eggnog stewed apples in it.

I'm only guessing though

Boy, ninya, this is a stumper for me.

I've never heard of the product you're talking about: Advocaat. I did a google search on it, to find out what it's like and I'm wondering that with all the reducing you're talking about, if you'd drive the brandy right out of it?

My take on the kind of cake that you're envisioning is to do the following:

Go to King Arthur and get an Eggnog Extract, to add to your cake to give it an eggnog taste.

Saute the apples in brandy. Add them to the cake, either in chunks, at the bottom to be flipped, or on the top. YOUR choice.

Heat up the Advocaat and try Knox gelatin as the thickening agent, just a wee bit, not the entire envelope. Then, when the cake is cut and to be served, the thickened Advocaat is spooned over the top.

How's that sound?

LOL well I am sorry to stump you Bee! I think the Advocaat (which is thick anyway like a thick custard) would not really need the gelatine but I do get your drift, thank you for those ideas.

I think I shall just put my foot forward and trust :lol: :lol: - what is the worst that could happen, a nice gooey mess that tastes good ;) ;)

I'll be following this thread, ninya. I know when I get a bee in my chef's bonnet about some recipe idea and there's no stopping me! Some are utter flops, destined for the coons, and others are so good, the recipe gets published.
