My mom has been looking for a recipe to make ribs in the crock pot. They dont eat spicy foods so a mild sauce is needed.

Crock Pot Ribs

This is one of my favorites, and nothing spicy, easy too. I haven't uploaded it here yet, it is on another site.
2 lb short ribs
salt and pepper
2-3 tablespoons olive oil to saute
Sauce:
1 large onion, rough chopped
2 large celery ribs, rough chopped
1 cup carrots, peeled and rough chopped
3-4 cloves of garlic, chopped
2 bay leaves (fresh is best if you have them)
1 cinnamon stick
2 bottles dark beer (dark works better, but any beer on hand will work)
3 cups beef stock or broth
1 tablespoon fresh parsley
Gravy:
3 tablespoons equal parts all purpose flour and butter
Season the ribs well with salt and pepper, and brown the ribs in the oil. Than add to the crock pot along with all the vegetables, beer, broth, seasoning (except the parsley)
Cook 8-9 hours on low until falling apart.
Remove the ribs to a serving platter and cover.
Strain the liquid and transfer to a pot on the stove. Reduce 10-15 minutes and then thicken with a mix of the flour and butter.
Serve over rice, potatoes, noodles.
