Sponge cake filling

I plan to make a two layer sponge cake (each layer a small round cake pan vs. 1 that is cut in 1/2) and I wanted to know what would be a good filling for that. Preferably with a fruit / jam and whiipped cream? Any recipe that includes a good filling would be fine, and I will just ignore the cake part since have a recipe for that already. ALSO, based on your experience, is it better to just make 1 cake cut in half OR the to layer cake with one cake pan each. I see recipes both ways. THANKS

Hi BigD!

Make a half recipe of my cream cheese frosting and mix in Cool Whip until you have the fluffy soft texture that you want, then if your filling is firm enough spread a layer of strawberry or raspberry jam over it, I have done this many times for those kind of cakes :)

your welcome BigD, make sure you mix in enough Cool Whip for a light fluffy filling, you can even spread the jam on the cake and cream filling on top of jam

Your filling that I used when spread over strawberry jam was FABULOUS. But, I wish that I could say the same for the sponge cake recipe I used. Can you recommend one giving me the ID # from this site or the old one? I would really appreciate it, and I would prefer a two layer / two round cake pan version to make it "higher." THANKS!
